Sandip's mother, Reba Roy Chowdhury, still likes to make some vegetarian staples.
1 teaspoon mustard seed
1-2 dried red chilies
1-2 medium potatoes scrubbed and cut into small cubes
1 bunch spinach washed and chopped finely
1/2 cup frozen peas
1 tablespoon oil
Salt to taste
1 tablespoon bodi (small lentil dumplings available at Indian grocery stores) (Optional)
Heat the oil. When it is hot add the red chilies and mustard seed. As the seeds pop and the chilies darken, add the cubed potato. Fry the mixture until potatoes are lightly browned, then add the finely chopped spinach. Lower heat and cover for a couple of minutes. Water should come out of the spinach. Remove the cover and add the frozen peas. Stir the dish, and let the water dry up. The spinach should have a slightly fried look. Add salt and a pinch of sugar.
If you are using the bodis, fry them separately until they are crisp. Drain them on paper towels and then crumble them, sprinkling them on top of the stir fry.

!!!
harro! here's a super simple recipe i invented for my mom's birthday last weekend (i'm not sure if it even counts as a recipe, really, but it was tasty!).
Stuffed Portabello Mushrooms (serves 3)
INGREDIENTS
-3 big portabello mushrooms
-6 wedges of Laughing Cow Cheese, Garlic & Onion Flavor, at room temperature and stirred together in a bowl until creamy and spreadable.
-3 cups spinach
-1/4 cup walnut pieces
DIRECTIONS
-roast mushrooms until cooked through at 400. this took about 15 minutes in our oven.
-wilt spinach in microwave
-layer wilted spinach onto mushrooms (i used just enough to cover the mushroom, essentially...it really depends on how much you like spinach!)
-spread a thick layer of cheese on each mushroom
-top with a layer of walnut pieces
-broil for about 45 seconds!
I served it with this salad, to which i added a can of chick peas, 3 T sugar, and a dash of soy sauce (well, i used bragg's liquid aminos) to taste--http://www.nytimes.com/2011/01/02/weekinreview/02recipes-3.html . also, according to my parents it went really well with champagne!

Portuguese Sweet Bread
1 cup milk
1 egg
2 tablespoons margarine
1/3 cup white sugar
3/4 teaspoon salt
3 cups bread flour
2 1/2 teaspoons active dry yeast
1.In a large bowl, stir together all ingredients. Knead for 6 to 8 minutes, until smooth and elastic. Place in a large greased bowl, and turn the dough to coat. Cover, and let rise in a warm place until doubled, about 1 hour.
2. Preheat the oven to 375 degrees F (190 degrees C). Bake for 20 minutes, or until lightly golden brown.
I like to braid it and brush with egg before I pop it in the oven.

Welcome Meerkats!
Hello!
Thought this could be a nice way to help each other out as we mosey on into real world after graduation. Here's a blog to document any recipes (proven ones or ones you wish you could make successfully)... they don't have to be fancy!
personally, I've got to find things other than asian food to cook...
